USDA is in the middle of a five-year study collecting information on how the public handles food. The results of the study will be used to teach the public better techniques for handling, cooking, and serving food as well as cross-contamination.
FSIS Food Safety Director, Chris Bernstein, says they are learning what the public does and does not understand about food safety.
Bernstein says they were surprised by some of the results.
He says they were also surprised by the cross-contamination results from the lack of adequate handwashing.
Results from the will help the USDA in creating better instructional videos on food safety and handling, not only for the consumer but also for the commercial kitchen.
