The use of a meat thermometer can help to fix that issue.
The other big issue is cross-contamination. Carothers says that can happen in a couple of ways.
This can also happen if you used the same dish to bring the raw food to the grill and place the cooked food on that dish to serve it. Carothers says always use a new dish or one that has been properly cleaned.
