USDA – Pumpkin Is A Superfood

When you hear Pumpkin, you likely think either pie or jack-o-lantern, but the USDA says Pumpkin is a superfood.  Carol Connell with USDA’s Alabama Cooperative Extension System explains that pumpkin has a lot to offer.

High in fiber and nutrient value.

Connell says Pumpkin is versatile.

Roasted as a side dish for dinner.

She says it can also be used in soups, breads and muffins, and even smoothies for breakfast, and of course cakes and pies.
